SOCAL BIVALVES

ON MY MOST RECENT TRIP TO SANTA BARBARA WE INDULGED IN THE MOST AMAZING OYSTERS AND MUSSELS, PLUCKED FROM THE SEA JUST MOMENTS BEFORE THEY HIT THE POT (AND OUR MOUTHS). I WAS SO IMPRESSED WITH THE BRINEY DELICIOUSNESS OF THE MUSSELS-THEY HARDLY NEEDED ANY OF THE ADDITIONS THAT WERE GIVEN TO THEM. THE OYSTERS WERE EATEN MANY WAYS-RAW, BARBECUED (WITH BUTTER AND SHALLOT) AND FINALLY DUSTED WITH FLOUR AND CORNMEAL THEN FRIED-FOR BREAKFAST.
