DRY AGED RESULTS

SO, THE BEEF WAS IN THE WALK IN FRIDGE FOR 22 DAYS. (I CUT THE 28 DAYS SHORT AS THE MEAT WAS PRETTY LEAN AND DRYING OUT FAST) THEY WERE BROUGHT OVER TO THE BAND SAW AND I CUT AND TRIMMED OUT SOME PRETTY BEAUTIFUL PORTERHOUSE AND RIBEYE STEAKS, ABOUT 2-3 INCHES THICK. THEY WERE GRILLED AND CRITIQUED. THOUGH THERE WAS NOT TONS OF FATTY MARBLING, THE MEAT WAS NUTTY AND BEEFY IN FLAVOR. TENDER AND SWEET. THE RIBEYE WAS MY FAVORITE AS IT CONTAINED THE MOST MARBLING. I HAVE BEEN EATING THE RESULTS FOR THE LAST 3 DAYS. A GREAT SUCCESS.

CUTS LIKE A KNIFE

HERE IS A COLLECTION OF VINTAGE HUNTING/FISHING AND CAMP KNIVES

I HEADED TO ROLEX ON MADISON AVE YESTERDAY. I'VE ALWAYS AVOIDED THAT PLACE FEARING THE WORST OF EXPENSIVE SERVICE CHARGES. I HAVE ALWAYS GONE TO ONE GUY FOR MY WATCH FIXES AND HE NOW SETS UP SHOP ON 47TH ST IN THE DIAMOND DISTRICT. WELL, NEITHER HE OR HIS VERY CONNECTED ASSOCIATES COULD FIND ME A BAND THAT WAS CORRECT FOR THIS 1675 GMT (BELOW) SO OFF TO ROLEX I HEADED ON THE ADVICE OF MY FRIEND CHRIS (WHO IS A PUBLISHER AT CONDE NAST AND KNOWS HIS WAY AROUND FINDING THE RIGHT SOURCE). IT WAS A GREAT VISIT. COURTEOUS, CALM AND NOT PUSHY. THE TECHS WERE VERY HELPFUL AND SORTED ME OUT WITH THE RIGHT BAND. (PRESENTED IN THIS COOL GREEN SUEDE POUCH). THE BOWL OF LINDT CHOCOLATES DEFINITELY EASED THE PAIN OF THE 45 MIN WAIT. THEY ARE SWISS AFTER ALL. VERY THOROUGH.

ITALIAN STYLE

ON A TRIP TO MILAN NOT TOO LONG AGO I DISCOVERED (IN A VERY OLD SCHOOL STATIONERY SHOP) THAT THE MILANESE DON'T USE ADDRESSES ON THEIR COUNTRY RESIDENCES' STATIONERY, BUT RATHER JUST AN IMAGE OF THE HOUSE. I LOVED THE IDEA OF THIS AND WANTED TO DUPLICATE IT FOR MY PREFAB HOUSE IN UPSTATE NEW YORK. MY FRIEND SCOTT VINCENT CAME UP WITH THE DRAWING AND I HAD MY LOCAL GUYS AT ECHO PRESS DO THE PRINTING-LETTERPRESS.

CLASSIC STYLE : THE WOOLRICH SHIRT

GRANTED, I HOPE I DON'T NEED THIS SHIRT ANY LONGER THIS SEASON. BUT, IT WAS MY FAVORITE ALL WINTER. I HAVE MOUNDS OF VERY HIGH TECH WINTER GEAR BUT NOTHING PERFORMED AS WELL AS THIS VINTAGE WOOLRICH RED WOOL SHIRT (TOP).
IT KEPT ME TOASTY IN THE CITY AND IN THE WOODS SITTING FOR HOURS, THIS DEER SEASON. I WAS LUCKY ENOUGH TO PICK UP ANOTHER (BELOW) IN NEARLY PERFECT CONDITION  RECENTLY AT NEAL MELLO ON GRAND ST. IN WILLIAMSBURG.

HERE ARE SOME REALLY DELICIOUS TREATS FROM MY RECENT TRIP TO BAHIA BRAZIL. AN EXCITING PLACE TO EAT AND DRINK.

THIS WAS A FIRST. WE GOT THESE TURKEY EGGS (THE FRECKLED ONES) AT THE MARKET IN MONTREAL.
I'VE EATEN CHICKEN, QUAIL, AND DUCK EGGS BUT THESE TURKEY EGGS WERE LIKE NOTHING I'D EATEN BEFORE. SOMEHOW, THEY HAD ALL THE RICHNESS AND CREAMINESS OF THE DUCK WITHOUT THE BARNYARD GAMINESS. THEY ARE REALLY GOOD.

THE WALK-IN

I HAVE BEEN TAKING CONTROL OF HOW AND WHAT WE EAT FOR SOME TIME NOW.
I'VE ALWAYS WANTED A WALK-IN REFRIGERATOR TO HAVE EVEN MORE CONTOL OVER HANGING GAME, BEEF AND OUR PIGS. MY WALK-IN STARTED WITH A SALVAGED WOODEN DOOR FROM A LOCAL RESTAURANT UNDER DEMOLITION AND LOTS OF HELP FROM MY VERY TALENTED NEIGHBORS, WHO HANDLED THE ACTUAL CONSTRUCTION.
