I HAVE ALWAYS LOVED THE HEARTY NUTTY BREADS OF MIDDLE EUROPE. I ALSO HAD TO PICK MY CARBO POISON LATELY (WHITE BREAD VS BEER-I'LL TAKE BEER). BUT NOW I NO LONGER SUFFER THE LACK OF A GREAT CARRIER FOR MEATS, CHEESE AND EGG SALAD WITH THIS AMAZINGLY NUTTY (HIGH PROTEIN) BREAD. MY FRIEND TURNED MY ON TO IT AND IT IS ALSO INCREDIBLY EASY TO MAKE.
WHAT YOU'LL NEED:
SILICONE BREAD PAN
1.5 CUPS ROLLED OATS
1 CUP SUNFLOWER SEEDS
1/2 CUP NUTS (ALMONDS/WALNUTS/HAZEL)
3 TBSP COCONUT OIL
1 TBSP MAPLE SYRUP
2 TBSP CHIA SEEDS
1/2 CUP FLAX SEEDS
1-2 TBSP SALT
4 TBSP PSYLLIUM SEED HUSK
(BINDS BREAD BUT NOT COLON!)
1.5 CUPS WATER
MIX ALL DRY INGREDIENTS TOGETHER
WHISK ALL WET INGREDIENTS TOGETHER
MIX ALL TOGETHER IN PAN OR SEPARATE BOWL
ONCE MIXED:
SMOOTH TOP WITH A SPOON
PLACE IN MIDDLE RACK OF
PREHEATED OVEN 350 -375 DEGREES
COOK 20 MIN
REMOVE LOAF FROM PAN AND PLACE UPSIDE DOWN (BOTTOM OF BREAD NOW FACES UP) ON OVEN RACK FOR ADDITIONAL 30-40 MIN
BREAD IS DONE WHEN SOUNDS HOLLOW WHEN THUMPED AND GOLDEN BROWN
LET IT COOL!
WITH LAST ABOUT 5 DAYS SEALED AND FRIDGED
(FREEZES WELL)
SUBSTITUTE SPELT OR HEMP FOR HIGHER PROTEIN
RENDER THE COCONUT OIL

Looks delicious. One question about the instructions. When you say remove from pan and place "face down" do you mean to turn it upside down? If not, what is the "face"
I've been trying to cut the bread out of my diet too. This looks like a winner.
